Zucchini Noodle Bowl
A light, fresh alternative to pasta with spiralized zucchini.
🥘 Ingredients
- 3 medium zucchini, spiralized
- 2 fresh chicken breasts (optional)
- 2 tbsp olive oil
- 2 cloves garlic (omit if sensitive)
- 1 cup cherry tomatoes (use cucumber if avoiding tomatoes)
- Fresh basil
- Sea salt to taste
👨🍳 Instructions
- Spiralize zucchini into noodles
- If using chicken, cook and slice
- Heat 1 tbsp olive oil in pan
- Sauté zucchini noodles for 2-3 minutes (don't overcook)
- Season with salt
- Top with chicken if using
- Drizzle with remaining olive oil
- Garnish with fresh basil
