  1. Heat olive oil in a large skillet
  2. Add diced sweet potatoes and onion
  3. Cook for 15 minutes, stirring occasionally, until tender
  4. Make 4 wells in the hash
  5. Crack an egg into each well
  6. Cover and cook until eggs are done to your liking
  7. Season with salt and garnish with parsley
  8. Serve immediately
