Sweet Potato Breakfast Hash
A hearty, satisfying breakfast with sweet potatoes and fresh eggs.
🥘 Ingredients
- 2 medium sweet potatoes, diced
- 4 fresh eggs
- 1 small onion, diced
- 2 tbsp olive oil
- Fresh parsley, chopped
- Sea salt to taste
👨🍳 Instructions
- Heat olive oil in a large skillet
- Add diced sweet potatoes and onion
- Cook for 15 minutes, stirring occasionally, until tender
- Make 4 wells in the hash
- Crack an egg into each well
- Cover and cook until eggs are done to your liking
- Season with salt and garnish with parsley
- Serve immediately
