Simple Chicken Vegetable Soup
A comforting, healing soup with fresh chicken and vegetables.
🥘 Ingredients
- 2 fresh chicken breasts, diced
- 4 cups water or homemade broth
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 zucchini, diced
- 1 small onion, diced
- 2 tbsp olive oil
- Sea salt to taste
- Fresh herbs (parsley, thyme)
👨🍳 Instructions
- Heat olive oil in a large pot
- Add onion, carrots, and celery, cook 5 minutes
- Add chicken and cook until no longer pink
- Add water or broth and bring to boil
- Reduce heat and simmer 15 minutes
- Add zucchini and cook 5 more minutes
- Season with salt and herbs
- Serve hot and eat immediately
