Quinoa Veggie Stir-Fry
A colorful, nutrient-packed vegetarian meal with quinoa and fresh vegetables.
🥘 Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 2 cups broccoli florets
- 1 large carrot, julienned
- 1 zucchini, sliced
- 2 tbsp olive oil
- 1 tsp fresh ginger (optional)
- Sea salt to taste
👨🍳 Instructions
- Cook quinoa: combine with water, bring to boil, reduce heat and simmer 15 minutes
- Heat olive oil in a large pan
- Add carrots and cook 3 minutes
- Add broccoli and zucchini, cook 5 minutes
- Add ginger if using, stir well
- Season with salt
- Serve vegetables over quinoa
- Eat fresh, do not store
