🥘 Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 cups broccoli florets
  • 1 large carrot, julienned
  • 1 zucchini, sliced
  • 2 tbsp olive oil
  • 1 tsp fresh ginger (optional)
  • Sea salt to taste

👨‍🍳 Instructions

  1. Cook quinoa: combine with water, bring to boil, reduce heat and simmer 15 minutes
  2. Heat olive oil in a large pan
  3. Add carrots and cook 3 minutes
  4. Add broccoli and zucchini, cook 5 minutes
  5. Add ginger if using, stir well
  6. Season with salt
  7. Serve vegetables over quinoa
  8. Eat fresh, do not store
