Mediterranean Stuffed Zucchini Boats
Hollowed zucchini filled with quinoa, fresh herbs, and vegetables, Mediterranean-style.
🥘 Ingredients
- 4 medium zucchini
- 1 cup quinoa, cooked
- 1/2 lb fresh ground chicken or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh oregano
- 3 tbsp olive oil
- Sea salt and black pepper
- Optional: fresh mozzarella
👨🍳 Instructions
- Preheat oven to 375°F (190°C)
- Halve zucchini lengthwise and scoop out centers
- Chop zucchini flesh and set aside
- Heat 2 tbsp olive oil in pan
- Cook onion and garlic for 3 minutes
- Add ground meat and chopped zucchini flesh, cook until done
- Mix in cooked quinoa and fresh herbs
- Season with salt and pepper
- Fill zucchini boats with mixture
- Drizzle with remaining olive oil
- Bake for 25-30 minutes until zucchini is tender
- Top with fresh mozzarella in last 5 minutes if using
- Serve hot
