🥘 Ingredients

  • 4 medium zucchini
  • 1 cup quinoa, cooked
  • 1/2 lb fresh ground chicken or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh oregano
  • 3 tbsp olive oil
  • Sea salt and black pepper
  • Optional: fresh mozzarella

👨‍🍳 Instructions

  1. Preheat oven to 375°F (190°C)
  2. Halve zucchini lengthwise and scoop out centers
  3. Chop zucchini flesh and set aside
  4. Heat 2 tbsp olive oil in pan
  5. Cook onion and garlic for 3 minutes
  6. Add ground meat and chopped zucchini flesh, cook until done
  7. Mix in cooked quinoa and fresh herbs
  8. Season with salt and pepper
  9. Fill zucchini boats with mixture
  10. Drizzle with remaining olive oil
  11. Bake for 25-30 minutes until zucchini is tender
  12. Top with fresh mozzarella in last 5 minutes if using
  13. Serve hot
