🥘 Ingredients

  • 1 large head cauliflower
  • 3 tbsp olive oil
  • Sea salt and black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh oregano
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil (for sauce)
  • Pinch of sea salt

👨‍🍳 Instructions

  1. Preheat oven to 400°F (200°C)
  2. Slice cauliflower into 1-inch thick steaks
  3. Brush both sides with olive oil, season with salt and pepper
  4. Place on baking sheet and roast for 25 minutes, flipping halfway
  5. While cauliflower roasts, make chimichurri: mix parsley, mint, oregano, garlic, and olive oil
  6. Season chimichurri with salt
  7. Serve cauliflower steaks topped with fresh herb sauce
  8. Eat immediately while warm
