Mediterranean Cauliflower Steaks
Thick-cut roasted cauliflower with fresh herb chimichurri sauce, Mediterranean-style.
🥘 Ingredients
- 1 large head cauliflower
- 3 tbsp olive oil
- Sea salt and black pepper
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh oregano
- 2 cloves garlic, minced
- 3 tbsp extra virgin olive oil (for sauce)
- Pinch of sea salt
👨🍳 Instructions
- Preheat oven to 400°F (200°C)
- Slice cauliflower into 1-inch thick steaks
- Brush both sides with olive oil, season with salt and pepper
- Place on baking sheet and roast for 25 minutes, flipping halfway
- While cauliflower roasts, make chimichurri: mix parsley, mint, oregano, garlic, and olive oil
- Season chimichurri with salt
- Serve cauliflower steaks topped with fresh herb sauce
- Eat immediately while warm
