  • 2 very fresh white fish fillets (cod or hake)
  • 2 cups sushi rice or short grain rice
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 cup edamame (if tolerated)
  • 2 tbsp sesame seeds
  • 2 tbsp coconut oil
  • Fresh ginger, grated
  • Sea salt
  • Fresh nori sheets, cut into strips (optional)

👨‍🍳 Instructions

  1. Cook rice according to package directions
  2. Season fish with salt
  3. Heat coconut oil in pan
  4. Cook fish for 3-4 minutes per side until flaky
  5. Prepare vegetables while fish cooks
  6. Divide rice between 2 bowls
  7. Top with cooked fish, cucumber, carrot, and edamame
  8. Sprinkle with sesame seeds and fresh ginger
  9. Add nori strips if using
  10. Serve immediately
