Carrot Ginger Soup
A warming, anti-inflammatory soup that's soothing and nourishing.
🥘 Ingredients
- 6 large carrots, chopped
- 1 onion, chopped
- 2 tsp fresh ginger, grated
- 3 cups water or broth
- 1 cup coconut milk
- 2 tbsp olive oil
- Sea salt to taste
- Fresh herbs for garnish
👨🍳 Instructions
- Heat olive oil in pot
- Sauté onion until soft, about 5 minutes
- Add carrots and ginger, cook 3 minutes
- Add water or broth, bring to boil
- Reduce heat and simmer 15 minutes until carrots are soft
- Use immersion blender to puree until smooth
- Stir in coconut milk
- Season with salt and serve hot
