🥘 Ingredients

  • 6 large carrots, chopped
  • 1 onion, chopped
  • 2 tsp fresh ginger, grated
  • 3 cups water or broth
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • Sea salt to taste
  • Fresh herbs for garnish

👨‍🍳 Instructions

  1. Heat olive oil in pot
  2. Sauté onion until soft, about 5 minutes
  3. Add carrots and ginger, cook 3 minutes
  4. Add water or broth, bring to boil
  5. Reduce heat and simmer 15 minutes until carrots are soft
  6. Use immersion blender to puree until smooth
  7. Stir in coconut milk
  8. Season with salt and serve hot
