Fresh Asian Summer Rolls
Light Vietnamese-inspired rice paper rolls filled with fresh vegetables and herbs.
🥘 Ingredients
- 8 rice paper wrappers
- 2 fresh chicken breasts, cooked and sliced
- 2 cups lettuce, shredded
- 1 large cucumber, julienned
- 1 large carrot, julienned
- 1/2 cup fresh mint leaves
- 1/2 cup fresh basil leaves
- 1/2 cup fresh cilantro
- Rice noodles, cooked (optional)
- Tahini dipping sauce (tahini, water, salt, garlic)
👨🍳 Instructions
- Cook chicken and slice thinly
- Prepare all vegetables and herbs
- Fill a shallow dish with warm water
- Dip one rice paper wrapper in water for 3-5 seconds
- Place on clean surface
- Add lettuce, cucumber, carrot, herbs, chicken in center
- Fold sides in, then roll tightly
- Repeat with remaining wrappers
- For dipping sauce: mix tahini with water until pourable, add salt and garlic
- Serve immediately with tahini sauce
